Cookies for Breakfast

These cookies for breakfast are just what you need on a busy morning! They are a perfect healthy treat with no added sugar.

Tips for Breakfast Cookies:

  • Use any nut you prefer for this recipe. If you use a larger nut for an example walnuts or almonds, I would chop them up first.
  • If you can’t find dried cherries, you can try raisins, golden raisins or any dried fruit cut into a small pieces.
Maple syrup, applesauce, and soft butter in a bowl.
Combine the applesauce, maple syrup, soft unsalted butter and mix together. Next, stir in the vanilla extract and 1 egg.
Oats, flour, cinnamon, salt and baking powder in a bowl.
In a separate bowl, add the old fashioned oats, wheat flour, salt, baking soda, and cinnamon.
Ground flax seeds added to the bowl of dry ingredients.
I forgot to add the ground flax seeds in the above picture. Add the flax seeds with the other dry ingredients and mix well.
Wet and dry ingredients added together.
Slowly add in a little bit of the dry ingredients in with the wet ingredients. You can mix with a rubber spatula or with a handheld mixer.
Pistachio nuts and dried cherries added to the cookie mixture.
Finally, add in the dried cherries and shelled pistachios. I kept the pistachios whole, but you can chop them up if you prefer.

Bake breakfast cookies for 15 minutes at 350 degrees.

These cookies for breakfast are just what you need on a busy morning! These breakfast cookies are healthy and have no added sugar.



  • 1/4 softened unsalted butter
  • 1/2 c. maple syrup
  • 1/2 c.  no added sugar applesauce
  • 2 tsp. vanilla extract
  • 1 large egg
  • 2 c. old fashioned oats
  • 1 c. whole wheat flour
  • 1/2 tsp. salt
  • 1/2 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/2 c. ground flax seeds
  • 1/2 c. shelled pistachios
  • 1/2 c. dried cherries


  1. Preheat oven to 350 degrees. Line a baking sheet with a silicone baking pad or parchment paper.
  2. Mix the butter, maple syrup, and applesauce together in a bowl.
  3. Add the egg and vanilla extract and mix until smooth.
  4. In a separate bowl, combine the oats, wheat flour, salt, baking soda, cinnamon and ground flax seeds.
  5. Slowly add the dry ingredients a little at a time to the bowl of the wet ingredients and mix well.
  6. Combine the pistachios and dried cherries and fold it all together
  7. Use a ice cream scoop or a 2 tbsp. measuring spoon, and scoop the cookie batter on the baking sheet. The cookies don’t spread while baking, so you can flatten the cookie dough with the palm of your hand and shape it into a circle shape.
  8. Bake for 15 minutes and place on a cooling rack when done.


  • You can substitute the dried cherries with raisins or another dried chopped up fruit.
  • If you don’t have pistachios, substitute it with another nut of your choice.
